Radicchio and Gorgonzola Roll

1. Wash and cut the radicchio into strips.
2. In a pan, fry the chopped onion with oil until golden.
3. Add the radicchio, salt, pepper and cook for 5-7 minutes until wilted.
4. Roll out the puff pastry and distribute the cooked radicchio evenly.
5. Add the gorgonzola in pieces and, if you like, the chopped walnuts.
6. Roll the pastry up, seal the edges and brush with the beaten egg.

7. Bake in a preheated oven at 180°C for about 25-30 minutes, until golden brown.
8. Allow to cool slightly before cutting and serving.
Preparation time: 40 minutes
