Potato and Egg Delight Recipe

Begin by peeling and boiling three potatoes until tender.
Mash the boiled potatoes to a smooth consistency.
Slice one onion and sauté it in sunflower oil until translucent.
Add one sliced pepper to the pan and continue frying until tender.
Season with salt and black pepper to taste.
In a separate bowl, beat two eggs with salt and 1/2 tablespoon of sugar.
Mix in 500 ml of milk and 200 grams of flour until a smooth batter forms.
Heat sunflower oil in a pan and pour a small amount of the batter to make thin pancakes.
Fry the pancakes until they turn golden brown on both sides.
To assemble, serve the pancakes with a generous portion of mashed potatoes, fried onions and peppers.
Sprinkle 100 grams of cheese and chopped spring onions over the dish.
Optionally, top with breadcrumbs and bake in the oven with a dab of butter for added crunch.
