Cajun Shrimp Pasta with Sausage

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a bowl, toss the shrimp with Cajun seasoning until well coated.
  3. In a large skillet or pan, heat olive oil over medium-high heat. Add the seasoned shrimp and cook until pink and opaque. Remove shrimp from the pan and set aside.
  4. In the same pan, add the sliced smoked sausage and cook until browned. Remove sausage from the pan and set aside.
  5. In the same pan, add chopped onion and cook until softened. Add minced garlic and cook for an additional minute.
  6. Add sliced bell pepper and halved cherry tomatoes to the pan. Cook until the vegetables are slightly tender.
  7. Pour in the chicken broth and heavy cream. Bring the mixture to a simmer.
  8. Return the cooked shrimp and sausage to the pan. Season with salt and black pepper to taste. Allow the mixture to simmer for a few minutes to let the flavors meld.
  9. Add the cooked pasta to the pan and toss until everything is well coated with the sauce.
  10. Serve the Cajun shrimp pasta with sausage hot, garnished with fresh parsley. Optionally, sprinkle with grated Parmesan cheese.
