Zucchini and Carrot Fritters

Vegetable fritters like these zucchini and carrot ones are a great way to get your veggies in without sacrificing flavor. What you need:

One big zucchini, around 2 cups of shredded

Half a cup of shredded carrots, or one medium carrot

Half of a big onion, or around 1/4 cup of finely chopped onion,

Two big eggs

Optional: a few of chopped garlic cloves or leaves

Finely mince a couple of green chilies.

A measuring cup (125 grams) of flour is needed.

Half a teaspoon of garlic powder

One quarter teaspoon of onion powder

Use 1/4 teaspoon of ground pepper.

Season with salt as desired.

Ground turmeric, 1/4 teaspoon

Use 1 tablespoon of oil for frying, or more if necessary.
